Making your own breadcrumbs is easy, cost-effective, and allows you to control the quality and flavor.
Step 1: Choose your bread:
The first step in making homemade breadcrumbs is selecting the right bread. Stale bread works best for this purpose as it will yield crispier and more flavorful crumbs. Any type of bread can be used, such as white, whole wheat, sourdough, or even gluten-free options. You can also mix different types of bread to create unique flavors.
Step 2: Prepare the bread:
Once you have chosen your bread, it's time to prepare it for grinding. You can cut the crusts of the bread if desired, but it really isn't necessary unless you looking for perfect uniform breadcrumbs.
You'll want to cut, break, or tear the bread into small pieces so that it's easier for the food processor to grind.
Step 3: Grinding the bread into crumbs:
You can use a food processor, blender, or a manual method such as a grater or rolling pin. Pulse the dried bread until you achieve the desired consistency. For fine breadcrumbs, pulse for a longer time, and for coarser ones, pulse less.
Step 4: Drying the bread:
To make breadcrumbs, you need to dry out the bread. Although stale bread may seem dry it's really only completely dry on the surface and still needs to be dried completely.
Preheat your oven to 250°F (120°C). Spread the breadcrumbs out onto a rimmed baking sheet and bake them for about 15-25 minutes, stirring every 5 minutes or so, until they are dry and lightly toasted. Make sure to keep an eye on them to prevent burning.
Once dried take the breadcrumbs out of the oven and allow them to cool for about 15 minutes.
At this point, If you like, you can shake them through a colander or mesh sieve for more uniform breadcrumbs, but of course it's not necessary.
Step 5: Season and store:
At this stage if you like, you can add additional flavor to your breadcrumbs by mixing in dried herbs or spices. Common additions include dried herbs like oregano, thyme, or rosemary, as well as garlic powder or onion powder. Be creative and experiment with different combinations to suit your taste preferences.
It's important to store your breadcrumbs properly to maintain their freshness. Transfer the breadcrumbs into an airtight container or sealable bag and keep them in a cool, dry place. Properly stored homemade breadcrumbs can last for several months.
Using your breadcrumbs:
Breading and frying: Breadcrumbs are great for creating a golden and crispy coating for fried foods like chicken cutlets, fish fillets, or vegetable fritters.
Topping for casseroles: When sprinkled over casseroles or gratins, breadcrumbs provide a delectable crispy topping. Whether it's a macaroni and cheese casserole or a vegetable bake, breadcrumbs add an irresistible texture and enhances the overall presentation.
Binding ingredient: Breadcrumbs can also serve as an excellent binding agent in meatballs, fish cakes, or veggie patties. They help absorb moisture, keeping the mixture together.
Dessert crusts: Yes, breadcrumbs aren't limited to just savory dishes, they can also be used in dessert recipes that call for crusts like cheesecakes or pies. Mixed with melted butter and sweetened with sugar or spices of your choice.
